
With a slightly spicy Chanterelle-like flavor, and a semi-sweet & mild fruity aroma, the Hedge Hog mushrooms is one of winter’s greatest treats. The season is from Jan – March & the quality is excellent. Similar to the Chanterelle, they pair well with fish and steak, chicken and game or mixed in a ragout served with fresh pasta, they are quite versatile. Sustainably foraged in Washington, Oregon & Northern California.
HOW TO STORE & HANDLE WILD MUSHROOMS
Wild Mushrooms should be kept in the refrigerator in a paper bag
Wild Mushrooms should be cleaned, preferably without water but rather with a pairing knife
Wild Mushrooms typically last for up to 7 days in the refrigerator, but are best consumed in the first 3 days
It is not uncommon to find the occasional bug on a Wild Mushroom, simply wipe it off and know that the mushroom is still perfectly safe and delicious to eat
If the mushrooms you receive are a little bit damp, feel free to air dry them in the refrigerator for a couple of hours
