Grapes are harvested at around -8C or 17-18 F exactly as it would be for ice wine. The juice is further evaporated by 50%. ICE SYRUP is the end result, more viscose than Ice Wine itself and higher in sugars, without sacrificing the characteristics of the grapes themselves.
